Buckwheat pancakes

 

 

Such a pleasant taste, & healthy too. It adds an umami taste, is gluten-free, a good source of fibre, & rich in minerals & plant compounds. It is recommended as a way to improve blood sugar control & health if the heart.

So easy to make as a pancake.  All you need to do is follow the usual pancake recipe, but instead of all plain flour, substitute half or all with buckwheat. Half for a lighter touch.

One of my faves is to fry butter & then some olive oil, add some crunched walnuts, then ladle in the buckwheat pancake batter, spreading around as evenly as possible in a divine round shape of pancake. Then patiently wait for the independence if bottom surface of pan before flipping, via spatula or arm force.  Then add some layers of cheese, which will quickly melt. Meanwhile, gently fry the spinach or green leaves on the side to add.  Maybe some basil or herbs to adorn, & that all important black pepper to bring everything together.  Extra olive oil or butter as you need.  Enjoy.
