Phad Thai: a fairly simple recipe apart from the chopping.
Phad Thai became one of my favourite weekly dinners after tasting it in Thailand. The key to success is to prepare all your ingredients prior to stir frying: vegetables and other ingredients can be varied according to taste, but always use ginger, spring onions, lots of soy sauce and lime, and fry in coconut oil, before adding fresh coriander. I like using prawns and tofu, but chicken is good too if it is free range and corn-fed.
