Camping food: vegan curry open sandwich :)

So now me and my partner are camping at a music festival in the Netherlands. The festival is an outdoor psy-trance music party and the outlook is pro-environment and nature. The food is wholesome and vegan. I am outside, in the countryside, and the sun is shining, so my vitamin D intake is optimum today.

We have a cooling bag full of leftover food from our vegan feast as well as some sourdough bread from a bakery in Nijmegan. So I decided to make an open sandwich of green bean and potato curry and houmus. Unusual combo, but that is what I had, and it worked. It was healthy and tasty, and non-wasteful, as well as packed with energy for the dancefloor.

I love open sandwiches and try different combinations all the time. They can be a great way to present lots of nutritious ingredients in the guise of a pretty little platter on a thick wholesome slice of bread-rye or sourdough are perfect. Think like an artist when designing your platter: choose colours and shapes which complement eachother visually and flavours and textures which tingle your tastebuds. Deck and decorate a sturdy piece of bread with toppings which can range from vegetables and salads, dips and sauces, fish, and so on; try avocado and salmon with herbs and cheese with beetroot/pickles and houmous as two of my favourites.
