Gram flour (chick peas): a staple in my kitchen.
A vegan treat: bhajias. So easy to make and cheap, and a great way to use up vegetables which would otherwise be put in the compost or, sadly,
the bin.
Today, I used up a courgette, onions, carrots, ginger, and turmeric. A great method to make sure they are cooked to delicious perfection is to grate them into a bowl of the gram flour, and then add cold water to make a smooth thick paste. This is really easy to do, and not as tricky as ordinary flour can be when it comes to smoothing out powdery lumps- I just slowly pour in water from the tap while stirring with a spoon. Then fry some coconut oil or another oil of your choice in a frying pan and, when hot, spoon in small dollops of the mix. Fry and flatten with a spatula on one side and then flip and do the same. After 2 minutes, put on some greaseproof paper or a wooden board to drain and cool. Delicious eaten alone or with soy sauce, mango chutney, or a sauce of your choice. Absolutely delicious! I have eaten about 5 already.
